Some of the dishes and recipes in this collection might seem unusual to modern palates, but they provide valuable insights into Roman gourmet tastes. Here are some fun and interesting dishes from "De Re Coquinaria": 1. Patina Versatilis Vice Dulcis: A savory "cheesecake" made with pepper, honey, broth, soaked bread, eggs, and a little oil. The ingredients are mixed, placed into a dish, and baked until it sets. 2. Lucanian Sausages: A type of sausage flavored with cumin, pepper, savory, rue, parsley, condiments, bay berries, and fatty meat. 3. Minutal Matianum: An apple stew made with minced meat, vinegar, wine-soaked bread, and a medley of seasonings. The dish is then garnished with green coriander. 4. Apothermum: A spiced wine made with pepper, nard leaves, saffron, date palm, honey, wine, and broth. 10. Gustum de Praecoquis: A starter dish made from early-ripening fruit, combined with stewed leeks, rue, and fennel seeds, bound together with a wine and pepper sauce. Remember, Roman cooking was rich in herbs, spices, and flavors, and many of these recipes reflect a fusion of various cultural influences that Rome absorbed over its vast empire.
