a pair of earphonesにしろ、a pair of shoesにしろ "a pair of " はan unit, 一つの単位と見なすことができます。 There is a pair of shoes beside the flower.と言いますね。

でも、イヤホンはもちろん靴やズボンと同じ、複数形で書かないといけませんよ。必ず複数形で用いる名詞には、earphones, shoes, pantsの他、scissors「はさみ」、gloves「手袋」、contacts「コンタクトレンズ」などがあります。
